Cherry bread is amazing. You have got to try this recipe. It is that time of the year when the cherries are starting to come on. The real trick is either spraying the cherries or getting to them before the worms or birds do.
Yes I was so excited to make this bread. My son had brought some cherries to me and then two days later he told me, “you might not want to eat those cherries because there are worms in the bottom of the bag”. Are you kidding me? I just had my heart set on making this amazing bread.
So I went to the store and bought some cherries. They were a little pricey, but this bread was so worth it and it doesn’t take that many cherries to make; just 2/3 cup. I decided that it would be nice to have a tool to remove the pits. But it really isn’t that hard to remove them.

How Do I Make Cherry Bread?
Here’s the simple steps you’ll follow to make this bread (scroll down for the full recipe):
Bread:
- In a medium mixing bowl, cream together coconut oil, butter, eggs and sugar.
- Add milk and chopped cherries, and mix.
- Then add the flour, baking powder, and salt, and mix until stirred.
- Add nuts and lemon juice and mix again.
- Bake @ 375 degrees in greased and floured loaf or bread pans for 50-55 minutes.
Glaze:
- In a small to medium sauce pan, place sugar and lemon juice.
- Cook on medium heat until the sugar is dissolved.
- Let the bread stand for 5 minutes before pouring glaze over the top of the bread.
You can eat the yummy bread with the glaze or without it. Either way it is really good.
It would be a nice bread for a shower or just to enjoy as a yummy snack. I don’t think a lot of people make cherry bread so they will think that you are so smart and you will be the hit of the celebration, whatever it is!
How do I Choose the Best Cherries for Cherry Bread?
- Check the stems — fresh cherries have green stems.
- Feel the cherries — cherries should be firm, no soft spots or bruising.
- Look for the good color — depending on the variety, ideally they should be deep, bright red to mahogany.
- Look the cherries over — fruit should be free of insect damage and pitting (little indentations caused by dehydration).
- Taste the cherries — be sure that the amount of sugar in the fruit is high. (Personally I wouldn’t taste cherries in the grocery store before I have purchased them, but if you have the option of tasting them, this is a good idea).
Oh, I must tell you that it is time to celebrate!! Our granddaughter is potty trained. She is doing so well, she just gets up and goes to the potty all by herself. Her reward is a Poppie Doll. That’s right the one from “Trolls”.
She also told grandma if I went potty that I too could get a Poppie doll! I think that sounds like a great idea. And I think that I need to play a little bit more. I love the energy that the grand kids have. They are so excited about life.

Cherry bread is such a nice change. The glaze makes it even better. Fresh chopped cherries and nuts give it just the right blend.
Ingredients
- 1/2 cup coconut oil or Crisco
- 1/2 cup butter
- 4 eggs
- 1 1/2 cups sugar

- 2/3 cup chopped cherries, drained

- 3 1/2 tsp baking powder

- Preheat oven to 375 degrees.

Thank you. I would not use mango, as I feel that it would make the bread soggy. But I think that frozen cherries would work fine.
Hi, I am a professional baker and i decided to make this recipe. I made tweaks to this recipe. I cut the flour and eggs in half. I omitted the milk and coconut oil. I added one teaspoon of vanilla extract and upped the butter to 3/4 cup. I also pureed the cherries. I reduced the sugar to a cup since my cherries are dark sweet cherries and I omitted the lemon juice. I only put 1 1/2 teaspoons of baking powder into my bread. It came out tasting amazing. I baked my bread in a 350 degree oven for 40 minutes. They came out perfectly.

I am sorry that you found the bread dry, but glad that you enjoyed the flavor. Some reasons for dry quick breads are: too little liquid, too much flour, over-mixing and baked too high of a temperature are all reasons your bread could be dry. A helpful trick is to wrap your quick bread while it’s still warm. Let it cool for a bit, and wrap it while it is still warm before you store it. I made this bread today. It was very dry. Set the timer for 50 minutes at 375⁰ and it was a good thing I checked it 5 minutes early, it was nearly burnt. I promised one of the loaves to a friend and I’m almost embarrassed to give it to them.
Glad you did check your bread early as every oven is so different. Also bread getting dry has to do with the amount of moisture in the air related to the amount of moisture in the bread. I had submitted a question and it disappeared. Can I use fresh tart cherries?
I have never tried tart cherries, I am not sure about the amount of liquid that they would produce. It would be fun to try them. With that being said, the bread won’t be as sweet, but if you use the tart cherries the bread could be amazing. Let me know if you try it and it works out! Have you tried this with cassava flour or almond flour? If so, what proportions would you change? I read cassava flour can be exchanged 1:1 in a recipe but it is a little heavier texture. I feel like it would need something other than just exchanging it it 1:1. Please advise if you have any experience in “alternative flours”. Thanks.
