This cookie dough cake was per the request of my 17 year old, for his birthday.  He does love cookie dough and this cake did not disappoint.  It is kind of fun to see what cakes my adult children pick for their birthdays.  I did enjoy making theme cakes for them through the years, but it’s still fun to make adult memories!

  • Eggs

How Do I Make Cookie Dough Cake?

Here’s the simple steps you’ll follow to make this Cake (scroll down for the full recipe):

 

Cake:

  • Combine eggs, melted butter, buttermilk, sour cream, brown sugar, and vanilla extract in a large bowl.
  • Stir in cake mix and chocolate chips.
  • Divide evenly between 3 8-inch greased, lightly floured pans, and spread the batter level.
  • Bake at 350 degrees for 17 – 22 minutes or until it tests done.

 

Frosting:

  • Beat butter and brown sugar for 2 minutes.
  • Add vanilla extract, flour, and salt, and beat again.
  • Slowly add in powdered sugar until you reach your desired consistency.
  • Remove approximately 2 cups of frosting (you will use this between your cake layers) and mix with chocolate chips.
  • To assemble cake, place your bottom layer of cake on your cake stand.
  • Use half of the frosting mixed with chocolate chips to frost top of your cake.
  • Then, place your next level of cake on top.
  • Use the remaining frosting mixed with chocolate chips to frost that layer.
  • Top with the final layer of cake and cover the cake with the rest of the frosting.

 

Garnishment:

  • Use mini chocolate chips to cover the top of your cake.

 

 

 

 

If I’m a Novice, How Can I Make My Cake Beautiful?

  • Sometimes we get overwhelmed with the though of decorating a beautiful cake. But I want you to know that there are little things that anyone can do and end up with a beautiful cake.
  • One of the best ways that I have found to keep from getting overwhelmed is to use simple things to decorate. For example the chocolate chips that I used on this cake are so simple that you could even let your children or grandchildren help.
  • You could even press some chocolate chips randomly into the sides of the cake, or cover the sides completely with chocolate chips.
  • You could also crumble store bought cookie pieces on top of the cookie dough cake. Or press whole store bought cookies sideways into the top of the cake. These things are so easy, but can make your cake beautiful.
  • I also like to keep my decorating to a minimum to keep from feeling overwhelmed. Don’t get me wrong because sometimes when I am feeling in the mood and have time, I love to decorate to the maximum. You don’t have to be a professional cake decorator to make a beautiful cake!

Ingredients

CAKE

  • 1 1/2 cups butter @ room temperature
  • 2 cups sugar
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 3 cups all-purpose-flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sour cream or plain Greek yogurt, (I use high fat)
  • 1/2 cup buttermilk
  • 1/4 cup whole milk
  • 1 cup mini chocolate chips
  • Cookie Dough Buttercream
  • 1 cup butter softened to room temperature
  • 4 1/2 cups powdered sugar
  • 1/2 cup brown sugar
  • 1/4 cup cream or enough to make it the consistency that you like
  • 1/4 cup flour
  • 2 tsp vanilla extract
  • 1/2 cup (90g) mini chocolate chips
  • Edible Cookie dough:
  • 1/4 cup butter @ room temperature
  • 1/4 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/8 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • I like to make any cut outs from cookie cutters to decorate the cake. Or however you want to decorate it.

Instructions

    COOKIE DOUGH CAKE:
    Preheat the oven to 350 degrees. Then prepare 2 9" cake pans by cutting 2 round 9" circles made from wax or parchment paper. Spray the pans with non-stick cooking spray.
    Using a stand mixer or an electric hand mixer, mix the butter and sugars in a medium bowl.
    Add the eggs and vanilla extract.
    Next add the milk and the sour cream or yogurt.
    Slowly add the flour, baking powder and salt.
    Sprinkle in the chocolate chips, and mix lightly.
    Divide the batter into the 2 different cake pans as even as possible. Place them in the oven and check to see if they are done around 25-30 minutes if a wooden pick comes out clean then they are done, if not check the cake every additional 3 minutes until the cake is done.
    Allow the cakes to cool in the pans for 4-5 minutes before removing them to a wire rack to cool completely. I put the top of the cake as the bottom when frosting them, or I just leave them upside down when I take them out of the pans.
  1. Cookie Dough:
  2. Using a hand mixer, cream the butter and sugars.
  3. Next add the milk, and vanilla and stir or mix to combine.
  4. Add the flour and salt then gently add the chocolate chips.
    1. The dough will be a play dough consistency, perfect for molding different designs.

    Cookie Dough Buttercream:

    Place the butter in a medium bowl.

    Then add the confectioners sugar, brown sugar, and the flour.

    Next, add the milk and the vanilla extract, Mix very well, for about 2-3 minutes.

    I then added the chocolate chips and it does make the cake a little harder to frost, so you can either add them to the frosting or place them on the cake where you want them.

      Assemble

      1. Spread an even layer of buttercream between each cake layer. Each layer uses one large heaping scoop using a standard sized rubber spatula.
      2. I ended up putting frosting one the outside of the cake about 10 time because of the chocolate chips. Then kept taking too much frosting off the cake and so that is why it is not smooth. But the frosting is so yummy more is better. 😉
      3. I have a large icing tip that allowed the mini cholate chips to come out just fine, or you could leave chocolate chips out of the frosting that you pipe onto the cake if you wanted.
      4. I rolled little balls of cookie dough and then placed them around the bottom of the cake. I also rolled out a small piece and then used a heart shaped cookie cutter to make the heart for the top of the cake.
      5. The cake was rich enough we ended up cutting it into about 30 pieces.
