You are going to love these amazing slow cooker chicken fajitas. Chop your vegetables, top with chicken and add some seasoning and you will have one fantastic meal. I love that you can put it in the crock pot and a few hours later you have your complete meal. Top it off with some sour cream and guacamole, and there is nothing better.
As for myself, I eat mine on chips or some mixed greens because I am not big on flour tortillas. Corn tortillas aren’t too bad, but I just like greens with a few chips. I always get a thumbs up from my family when I make this meal.
I used the Western Family seasoning mix, but I am sure that most of them are very close when it comes to flavoring. It turns out fantastic every time. You can even warm up your tortilla shells if you like. Some of my kids place some grated cheese on their shells and then place them in the microwave for 15 seconds, or you can put them in a tablespoon of oil in a frying pan for a few seconds, just to get them warm.

- Diced tomatoes with green chilies
- 1 each red, orange, yellow, and green bell pepper, julienned
- Yellow onion, sliced (thin slices)
- Garlic clove, minced
- Boneless, skinless chicken breast halves
- Fajita seasoning mix
- Salt
- Pepper
- Fresh lime juice
- Flour or corn tortillas or chips
- Cheese (cheddar or Monterrey jack)
- Sour cream, salsa, or guacamole
How Do I Make Slow Cooker Chicken Fajitas?
Here’s the simple steps you’ll follow to make these Fajitas (scroll down for the full recipe):
- Pour the can of tomatoes with chilies, in the bottom of the slow cooker and spread out.
- Place peppers on top of tomatoes, then the onions and minced garlic.
- Top with chicken.
- Mix the fajita mix with the 1/8 cup water and pour on top of chicken and the rest of the vegetables.
- Sprinkle with salt and pepper.
- Add lime juice.
- Cover with lid and cook until chicken is cooked through and the vegetables are tender.
- Remove chicken, and cut into strips, or shred it.
- Place chicken back into the crock pot and stir gently.

- 1 can (14.5 oz) diced tomatoes with green chilies

- 1 medium yellow onion, sliced (thin slices)
- 1 clove garlic, minced
- 2 lbs boneless, skinless chicken breast halves
- 1 pkg (1.25 oz) fajita seasoning mix
- 1/8 cup water
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 Tbsp fresh lime juice
- Flour or corn tortillas or chips
- Cheese (cheddar or Monterrey jack)
- Sour cream, salsa, or guacamole
Instructions
