How Do I Make Cheeseburger Soup with Bacon?

Here’s the simple steps you’ll follow to make this soup (scroll down for the full recipe):

 

  • In a large crock pot, place the onion, carrots, potatoes, salt, pepper, garlic salt, basil, parsley, and the broth.
  • Cook on high for 2 1/2-3 hours, or on low for 4-5 hours, or until the potatoes and carrots are soft and cooked.
  • Brown, drain and crumble the ground beef and then add it to the soup, one hour before serving.
  • Cook 6-8 slices of bacon and also add to the soup.
  • Wipe out the skillet with a paper towel and add the butter, then add the flour and cook until it starts to boil.
  • Whisk in the milk, stir until it is nice and combined.
  • Place the mixture into the crock pot and gently stir.
  • Add the cheese stirring gently.
  • Cook for an additional 15 minutes and then enjoy.

Ingredients

  • 1/2 cup chopped onion
  • 3/4 cup carrots, chopped
  • 1 cup cubed potatoes (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon parsley
  • 3 1/4 cups broth
  • 1 pound cooked ground beef
  • 6 slices of cooked bacon
  • 4 Tablespoons butter
  • 1/4 cup all purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • additional parsley for garnishing
