Kale Salad

  • 2 cups raw kale
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • ⅓ cup slivered almonds
  • ¼ cup dried, low sugar cranberries
  • Garnish with blackberries
  1. In a medium bowl, add the kale cut into smaller pieces.
  2. In a separate bowl add the oil, lemon juice, salt and pepper.
  3. Add to the kale and mix until all the kale is covered.
  4. Top the salad off with almonds and cranberries.
  5. You can also add blackberries if you want, for garnishing.
