Strawberry Bread

Serves: 2 loaves
  • 1 cup butter
  • 1½ cups sugar
  • 1 teaspoon vanilla
  • 4 eggs
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cream of tartar
  • ½ teaspoon soda
  • 1 cup smashed strawberries
  • ½ cup sour cream
  1. Cream the butter, sugar and vanilla together.
  2. Add eggs, one at a time, beating after each one.
  3. In another bowl, stir together flour, salt, cream of tartar, and soda, and set it aside.
  4. In a small bowl, combine the strawberries and sour cream. (I like to put my strawberries into the blender for a minute or two).
  5. Add the dry ingredients to the creamed mixture, alternating with the strawberries and sour cream. Mix well.
  6. Pour into two greased and floured loaf pans (my pans are 8½" X 4½").
  7. Bake at 350 degrees for 40 - 45 minutes.
