Whole wheat french bread is such a fun bread. I love that it is soft on the inside and crunchy on the outside. It is even a little healthier than regular french bread.

The other day my neighbor went to Winco and she said,” I love the whole wheat french bread that they have”. I tried some and it was truly amazing. So I decided that I would try my regular french bread recipe and just add some whole wheat flour. And it turned out fabulous.

We love to eat it with spaghetti. If you wanted to you could always add some garlic butter to it, however, I just love it fresh out of the oven with some butter added to it!!!

We had a fun night watching my grandson play basketball. He is 8 and can I just tell you how much fun it is to watch 8 year olds play basketball!

One of my favorite parts of the game was when the young man that was the tallest just stood there with the ball above his head and just let the other boys try and get it.

What Ingredients Do I Need For Whole Wheat French Bread?

  • All-purpose flour
  • Oatmeal flour (I blend regular oats in the blender)
  • Whole wheat flour
  • Salt
  • Active dry yeast
  • Sugar
  • Honey
  • Butter
  • Bread flour
  • Egg white

 

How Do I Make Whole Wheat French Bread?

  • In a medium size bowl, place the flours and salt.
  • Heat the water, then add the yeast and sugar to the water.
  • Allow the yeast to rise. When the yeast has started to rise, add it to the flour mixture.
  • Add the honey and the butter.
  • Stir in enough bread flour to make a nice soft dough. Knead the dough.
  • Place dough in a large bowl that has been sprayed; cover and allow to rise in a warm place until doubled. Punch the dough down; divide the dough into two pieces and let rest. Roll each half into a 14″ X 12″ rectangle. 
  • Place each loaf, onto the baking sheet.
  • Brush egg white mixture over each loaf.
  • Spray a piece of plastic wrap, cover, and let the dough rise until doubled.
  • Bake at 375° for 20 minutes.
  • Remove the bread from the oven and brush again with more egg whites; bake an additional 20 minutes.

 

I know that this shouldn’t be funny, but when another boy (my grandson) was trying to be nice and pass the ball to one of the other team’s players during warm up and the ball hit the poor kid in the face it was funny. Thank heavens he didn’t cry; he just let it bounce off and then he started playing again.

There were bloopers like that all night long. The most exciting part about it all was that my grandson made a basket!! Wa hoooo! And, they even won.

 

 

How and Why Do You Score French Bread?

  • Scoring is slashing the dough with a sharp knife to allow it to expand during baking.
  • The purpose is primarily to control the direction in which the bread will expand during baking. 

 

Doesn’t this bread dough just make you want to make some fresh whole wheat french bread? It just looks like such a delicious happy dough. And the smell will have everyone in the house jumping for joy.

Also, my daughter, her husband, and their kids all moved out. Now I am trying to get back into a routine. I guess that it is time to get rid of some junk and exercise. That will keep me busy for some time.

Another thing is that the weather has been so nice lately; I sure hope that we don’t have to start working in the yard soon. I am just not ready for that!! So, for now, I will focus on getting the office into shape and myself as well. That should only take about 4 months.

Whole Wheat French Bread

Whole wheat french bread is a soft bread with a crunchy outside. Packed with flavor. You can add this to any dinner, but our favorite is spaghetti.

Cook Time 40 minutes
Total Time 3 hours

Ingredients

  • 2 cups all-purpose flour
  • 1 cup oatmeal flour (I blend regular oats in the blender)
  • 2 cups whole wheat flour
  • 1 Tablespoon salt
  • 4 1/2 teaspoons active dry yeast
  • 2 1/2 cups water (110-120 degrees)
  • 1 Tablespoon sugar
  • 1 Tablespoon honey
  • 2 Tablespoon butter
  • 1 1/2 cups bread flour
  • 1 egg white, beaten
  • 3/4 Tablespoon water

Instructions

  1. In a medium size bowl, place the all-purpose flour, oatmeal flour, the whole wheat flour, and salt. (I put mine in a Bosch).
  2. Heat the water to 110-120 degrees, then add the yeast and sugar to 1 cup of the water.
  3. Allow the yeast to rise. When the yeast has started to rise, add it to the flour mixture.
  4. Add the honey and the butter.
  5. Stir in enough bread flour to make a nice soft dough. Knead with the dough hook on medium for 5-6 minutes, alternating with the remaining water.
  6. Place dough in a large bowl that has been sprayed or buttered so that dough doesn't stick; cover and allow to rise in a warm place until doubled, (about 1 hour). Punch the dough down; divide the dough into two pieces and let rest for 10-15 minutes. Roll each half into a 14" X 12" rectangle. Roll the dough starting with the long side. Seal and turn ends under to form a nice smooth loaf.
  7. Butter two baking sheets and place each loaf, seam side down, onto the baking sheet. Make slashes every 2 inches in the top of each loaf.
  8. Beat egg white and water; with a pastry brush, brush egg white mixture over each loaf.
  9. Spray a piece of plastic wrap, cover, and let the dough rise until doubled, (about 1 hour).
  10. Bake at 375° for 20 minutes.
  11. Remove the bread from the oven and brush again with more egg whites; bake an additional 20 minutes.
