Breakfast Burritos make a great breakfast, or anytime dish, and are very versatile. You can use sausage, bacon, ham, or a combination.

We really enjoy Mexican cuisine around here, so my family is always excited to have something like burritos for breakfast instead of the regular toast, waffles, or pancakes.

This is great for a family breakfast or even for a crowd. This will become one of your friends’ and family’s favorites, because you can add or take away what you want. You can even change out the sausage for bacon or ham. That would make my son-in-law happy (he loves bacon).

You could eat this any time of day. Do you ever wonder who decided which foods are breakfast foods, lunch foods, and dinner foods?

We had supper for our evening meal when I was growing up, because we had dinner for our midday meal. I grew up on a farm and that made sense to me that we needed a larger meal around midday so we could go back out and work the rest of the day. I actually still think that it makes sense, even though I don’t live on a farm anymore.

  • Maple Sausage (or any flavor)
  • Green pepper
  • Onion
  • Hash browns
  • Salt
  • Pepper
  • Eggs
  • Tortilla shells
  • Cheese

How Do I Make Breakfast Burritos?

Here’s the simple steps you’ll follow to make these burritos (scroll down for the full recipe):

 

  • In a large skillet, brown sausage, then drain. Set sausage aside.
  • Sauté green peppers and onions.
  • Brown hash browns in a small amount of oil, with salt and pepper to taste.
  • Remove hash browns from pan, or use a different skillet, and scramble eggs.
  • Mix sausage, peppers, onions, and eggs together.
  • On a tortilla shell sprinkle some grated cheese, then add your mixture of sausage, hash browns and eggs.
  • You can top it off with more cheese, salsa and even some avocados.
  • Roll up and enjoy.

 

 

It doesn’t make sense to me that we need our largest meal of the day before we go to bed. I guess that we eat our biggest meal of the day in the evening because that is when we are all together as a family. On the farm, we were all together as a family during midday, except when the kids were at school. And we actually had a pretty substantial  lunch at school back then.

So my sister loves breakfast and she eats breakfast foods any time of the day. I think that that is a great idea. Sometimes we just need to break out of the mold that someone else has created and be our own person!

Some of my family members like breakfast burritos without salsa, some like it with mild salsa, and some like it with hot salsa. So just use whatever you like. If you get really creative I think that some mango salsa would be really good. Just remember to enjoy it however you like.
